The Recipe

Ingredients:

  • 1 (15 oz) can black beans, rinsed and drained

  • 1 (15 oz) can black-eyed peas (or another bean variety), rinsed and drained

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 2 cups corn kernels (fresh, roasted, grilled, or frozen)

  • ½ a red onion, finely diced

  • 1 jalapeño, seeds removed and finely diced

  • 3 cloves garlic, minced (or more—garlic lovers, rejoice!)

  • Juice of 1 lime

  • 2 tablespoons red wine vinegar

  • 1/3 cup olive oil

  • Salt and pepper, to taste

Instructions: Simply chop, combine, and toss all ingredients in a large bowl.

Note: Some also add tomatoes, cilantro, avocado, cumin, dressings, Worcestershire sauce, or a number of other ingredients and spices. Cowboy Caviar is a versatile concept that can be easily adapted to taste and preference, so customize and personalize accordingly! Personally, I opt for the basic version listed above, so it is a versatile staple available for use as a side, dip, topping, and garnish. I also tend to consume it over several days, so I choose ingredients and liquid ratios that will help maintain freshness (i.e. I might consider incorporating tomatoes and avocados when making for a large gathering where I anticipate little leftovers).

Fun Food Facts

  • Black Beans: These little gems are rich in protein, fiber, and antioxidants. Did you know they’ve been a staple in Central and South American diets for thousands of years? They’re also known to help maintain blood sugar levels and may even improve insulin sensitivity, making them a great choice for sustained energy.

  • Black-Eyed Peas: Black-eyed peas are packed with folate, which supports cell growth and repair. Additionally, these legumes are a symbol of prosperity, abundance, and good luck in many culturesare and are traditionally consumed at the start of a new year.

  • Bell Peppers: Not only do red and green bell peppers add a splash of color, but they’re also loaded with vitamin C. Fun fact: Red bell peppers contain more than twice the vitamin C of an orange!

  • Corn: Corn brings natural sweetness and a satisfying crunch to this dish. It’s also a good source of carotenoids such as lutein and zeaxanthin, nutrients that support eye health.

  • Garlic: Known as a “superfood,” garlic has been used for centuries for its medicinal properties. It’s rich in allicin, which may help boost immunity and reduce inflammation.
