Looking for a colorful, nutrient-packed dish that’s as versatile as it is delicious? Cowboy Caviar might just be your new go-to secret weapon. Serve as a dip with tortilla chips, a colorful side, atop a salad or main dish, and more! This vibrant medley of beans, vegetables, and zesty seasonings isn’t just a treat for your taste buds—it’s also a nutritional powerhouse. Let’s dive into this recipe and explore some fun facts about its star ingredients.

The Recipe
Ingredients:
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can black-eyed peas (or another bean variety), rinsed and drained
1 red bell pepper, diced
1 green bell pepper, diced
2 cups corn kernels (fresh, roasted, grilled, or frozen)
½ a red onion, finely diced
1 jalapeño, seeds removed and finely diced
3 cloves garlic, minced (or more—garlic lovers, rejoice!)
Juice of 1 lime
2 tablespoons red wine vinegar
1/3 cup olive oil
Salt and pepper, to taste
Instructions: Simply chop, combine, and toss all ingredients in a large bowl.
Note: Some also add tomatoes, cilantro, avocado, cumin, dressings, Worcestershire sauce, or a number of other ingredients and spices. Cowboy Caviar is a versatile concept that can be easily adapted to taste and preference, so customize and personalize accordingly! Personally, I opt for the basic version listed above, so it is a versatile staple available for use as a side, dip, topping, and garnish. I also tend to consume it over several days, so I choose ingredients and liquid ratios that will help maintain freshness (i.e. I might consider incorporating tomatoes and avocados when making for a large gathering where I anticipate little leftovers).
